Creamy Chicken Rotini Rose

Don’t have a ton of time, but want a dinner that everyone will love? One pan is all you need to make this quick and easy creamy rose chicken pasta that gets a jumpstart from rotisserie or leftover cooked chicken and a few pantry items. FOR THE FUSSY

olive oil

cloves garlic, minced
½ tsp
dried Italian seasoning
3-½ cups
sodium reduced chicken broth
1 jar (650 mL)
Classico di Napoli Tomato & Basil Pasta Sauce
5 cups
rotini pasta, uncooked (400 g)
2 cups
shredded cooked rotisserie chicken
½ cup
Philadelphia Brick Cream Cheese, softened
RECIPES
STEP 1
Heat oil in large skillet on medium heat. Add garlic and Italian seasoning; cook 30 seconds or until fragrant, stirring constantly.
STEP 2
Add broth, pasta sauce and pasta; stir. Bring to boil; cover. Boil gently on medium heat 13 minutes, or just until pasta is tender, stirring occasionally.
STEP 3
Add chicken and cream cheese; cook and stir 1 to 2 minutes, or until melted and smooth.
FOR THE FANCY

INGREDIENTS

olive oil
2 cups
cremini mushrooms
1 tbsp
Classico Di Genova Basil Pesto
RECIPE
Pesto Mushrooms:
In skillet, heat 1 tbsp olive oil over medium-high heat. Add 2 cups sliced cremini mushrooms; cook, stirring, until browned and liquid is evaporated, about 4 minutes. Remove from heat and stir in 1 tbsp Classico Di Genova Basil.
After serving fussy eaters, top your serving with pesto mushrooms.
FOR THE FEARLESS

bunch rapini

cloves garlic
½ tsp
chili flakes
3 tbsp
pine nuts
RECIPE
In skillet, heat 1 tbsp olive oil over medium-high heat. Add 1 bunch trimmed rapini, cut in half, crosswise, 3 cloves garlic, minced and ½ tsp chili flakes; sprinkle with salt, to taste. Stir-fry until garlic is fragrant, about 1 minute. Add 2 tbsp water to pan, cover and steam until tender crisp, about 3 minutes. Sprinkle with 3 tbsp toasted pine nuts.
Serve with pasta.
